Safety and Security for Liquor Licensees

Featuring Robert C. Smith of Hospitality and Security Alliance, Inc.
Presented by the National Hospitality Institute®

This two-day, eight-hour seminar covers:

Criminal, Civil and Administrative Liabilities
Employees must worry about the criminal, civil and administrative liabilities of selling alcohol. This session will explain what each of these liabilities is, and how they can damage the establishment and the employee. Real live scenarios from other nightclubs, bars and restaurants across the country will be used to show each of these liabilities. Additionally, discussion will occur on how these incidents could have been avoided and how liability could be lessened.

Fire Safety and Evacuations Roles
Recent tragedies have brought to the forefront the issue of keeping patrons safe in the event of an emergency. From real world experiences, the attendees will learn what to do and what not to do in several emergency situations. Whether it is a fire, a sidewalk shooting, a release of a chemical agent or a potential terrorist attack, have your employees thought what they would do? This session will provide them with answers to questions they have and to mock situations that may arise. Additionally, fire drills and evacuation roles will be discussed and practiced.

Use of Force and Safely Removing Customers
Civil liability related towards the use of force within a nightclub, bar or restaurant is the highest preventable loss found within the industry. The losses from a security worker using too much force can cost hundreds of thousands of dollars. These costs are directly paid to a litigant and their attorney’s. These costs will always equal higher insurance premiums or cancellations. This session will show the attendees why they should not use force, what the courts consider "allowable" force and what to do legally if your employees must use force. Criminal and civil liabilities will be discussed as well as how to properly document any use of force. Finally, the view of law enforcement towards the use of force will be discussed with attendees.

Report Writing & Incident Log Entries
Proper documentation MUST be done. Documentation of important incidents can be a valuable money saving tool…if it is done correctly and consistently. Attendees will learn the value of report writing and of using an incident log or incident forms. Learn what should be included in a report versus an incident log. See why reports should be reserved for more important and serious incidents and why incident logs can cover the employees back if a criminal or civil issue should arise. Attendees will learn how to use an incident log and what types of things, big and small, should be put in them.

Recognition of Club Drug and Narcotics
In this session, attendees will discuss the most popular used drugs in the hospitality industry. This session will teach the attendees the signs and symptoms of such drugs as Ecstasy, GHB (Date Rape Drug), Methamphetamine, Ketamine and LSD. Real photos of the drugs and the tools of their use will be shown. Additionally, many real and look-alike props will be used to show attendees exactly what to look for before, during and after the nightclub or bar closes. This course will show employees what to look for in the patrons and in their fellow employees.

Communication Skills and Customer Service
Learn how to really talk to your customers. This skill can be taught with training and practice. Learn how voice inflection and tone changes can alter the mood of a customer who is unhappy or potentially violent. This session will show attendees how to start a dialogue with a patron as they enter the establishment and how to keep this conversation going during their stay. Additionally, this session will show valuable techniques to read and understand body language along with how to recognize when people are being untruthful with you.
